Last night the taste of the vegetarian meat made me think of something I haven’t eaten in a long time: sweet and sour pork. As I have not mixed any spices with the vegetarian meat, it is rather bland and will benefit from a strong tasting sauce. It turns out rather well though I think Christopher secretly would have preferred real pork.
ingredients
home-made vegetarian meat
1 carrot
1 small green pepper
small tin of bamboo shoots
1 tablespoon peanut oil
½ teaspoon cornflour (cornstarch)
1 teaspoon water
for the sauce
100ml water or vegetable stock
1 tablespoon light soy sauce
1 tablespoon rice wine vinegar
1 teaspoon sugar
1 teaspoon tomato ketchup
pinch of salt
Prepare the vegetables making sure they are the same size so they will cook at the same time. Mix the corn flour with water in a small bowl and leave to one side. In another bowl, mix the sauce ingredients together.
Heat the oil in a wok or saucepan. Stir-fry the vegetables for a couple of minutes. I like them still a little crunchy. Throw in the meat substitute and the sauce ingredients. Stir through for a minute or two and add the cornflour liquid. It will give the sauce a glossy finish. Season with salt and black pepper before serving.
