Duck eggs are whitish in colour, larger and richer in flavour than hen eggs. They are hard boiled and added to Coconut noodle soup or Mohingar, salted then the yolk is used in sticky rice parcels, and in an Egg curry. It is used in recipe that requires eggs but as it is not as readily available, hen eggs are good substitutes.
